Let’s Catch Up

Friends! It has been way too long since we last chatted.  First of all, thank you so much for not (publicly) mocking my bloated college self.  Or at least not mocking me to my face.

So, let’s catch up, shall we?

On Saturday evening, I met up with some friends at Standard Tap, a gastro pub in Northern Liberties for dinner and drinks.  I opted for a Sly Fox Royal Weiss and the Date & Nut Salad. Holy OMGeez, have you ever had a date stuffed with bleu cheese and wrapped in bacon?  If the answer is no, stop everything right now and go get/make one this very second.  Delectable.

I completely understand the irony of ordering a salad, yet consuming a date stuffed with bleu cheese and wrapped in bacon.   “Healthy Living” = a healthy balance, okay?

Once we completed our meal and adult beverages, a few of us trekked over to Frankford Hall to huddle around the fire pit and talk about the glory days of college (at pretty much the nerdiest school on the planet).  Go Tribe!

Sunday Morning Coaching Session:

It was Sunday Funday as usual at Unite with two Group Sessions (thinking of coming in to join us for a workout? Check out the group session schedule here!) and a 1-on-1 Personal Training Session.

As much fun as these Sundays have been, I must admit that by the end of the day, I was more than ready to get home and crash on the couch for a nap. I was completely spent.  Coaching the Sunday sessions always has a way of recharging my energy, but for some reason, this week I just needed to crash!

So Sunday ended up as an unscheduled Rest Day for me, which left me revved up and ready for a tough workout on Monday.

BAKED HALIBUT

I was on my own for dinner on Monday night, so I stopped in to Whole Foods on my way home from the gym.  I picked up a 6 ounce filet of Wild Caught Halibut and a Sweet Potato and ended up with this gem that I had to share with you guys.

Sidenote, I must be 100% truthful here; this meal was consumed while watching The Bachelor.

Fellow Bachelor fans: could Tierra BE any more TIERRA-ble? Ack.  The sneak-peak hypothermia scene looks TIERRA-mazing.  Ok, I’ll stop now, back to the eats.

Again, I placed the halibut in a foil pouch along with assorted raw veggies (including brussels sprouts, tomatoes, cauliflower, and carrots), a teaspoon of olive oil, salt, pepper, and a pinch of garlic powder.  Baked at 400* for 25 minutes. Simple, easy, healthy AND delicious dinner.
